Honey Apple Ribs
Want an easy barbeque sauce? Just use my Italian Barbeque Sauce.
Want to try something really tasty and impress your company? Try this-
3 1/2 pounds pork loin back ribs, cut into 2 – 3 rib portions
1/3 cup apple jelly
1 cup Angelo's Italian Barbeque Sauce
3 tsp Angelo's Garlic Mustard with Horseradish and Garlic
1 Tbsp brown sugar
2 tsp sweet pickle relish
1/2 tsp ground cinnamon
1/4 cup finely ground celery
1/4 cup water
In a medium sauce pan, combine my barbeque sauce, my garlic mustard, some name brand apple jelly, celery, brown sugar, relish, cinnamon and water. Cook and stir over medium heat until bubbly. Reduce heat and simmer, uncovered for about 15 minutes, stirring frequently. Remove from heat and cool.
Meanwhile place the ribs in a Dutch oven. Add water to cover. Bring to boiling. Reduce heat and simmer, covered for about 45 minutes or until tender. Drain. Cool slightly. Place ribs in a 3 quart baking dish, pour cooled sauce over ribs.
Cover and chill for several hours.
Before serving, remove ribs from the sauce. Reserve the sauce. Grill ribs directly over medium coals or broil 4 to 5 inches from heat for 15 to 20 minutes, turning and brushing with sauce once. (Watch closely to prevent burning). Heat any remaining sauce till bubbly; spoon this on the ribs. Makes five servings. Don't bother buying a lot of napkins.
These ribs are finger-lick... (oops, can't say that, sorry KFC) ... are so darn tasty that nobody will want to waste any of the sauce.
