March Madness Recipe (to eat while watching college basketball)
Zesty Manicotti

For this one, you have to begin about 2 1/2 hours ahead of time. But that's OK, because the NCAA basketball games usually have about 3 hours of pre-game commercials.

1 1/4 cups of water
1 pound of Angelo's Italian Sausage
1 pound ground beef
1 medium onion, chopped
1 16 oz jar of Angelo's Garlic Salsa
1 tsp sugar
1/2 tsp pepper
1 Tbsp basil
3/4 tsp basil
1 8 oz package of Manicotti shells
4 cups ricotta cheese
8 oz of diced mozzarella cheese
2 Tbsp of chopped parsley
grated Parmesan cheese

In a covered 5 quart Dutch oven, over medium heat, in 1/4 cup of water, cook sausage for five minutes. Uncover, brown well; drain on paper towels.

Spoon the fat from the Dutch oven; over medium heat, brown the ground beef and onion well; stir in Angelo's Garlic salsa, sugar, pepper, 1 Tbsp basil and 1 cup of water; simmer, covered for about 45 minutes.

Cut sausage into bite sized pieces, add to mixture; cook 15 minutes, stirring occasionally. Meanwhile, cook the manicotti as the box label directs, drain this in a colander, and pre-heat the oven to 375F.

In a large bowl, combine ricotta and mozzarella cheeses, parsley, 3/4 tsp basil, and stuff this into the shells.

Spoon half of the meat sauce into a 13"x 9" baking dish. Place half of the shells over sauce in one layer. Spoon the remaining sauce ((except about 3/4 cup) over this layer of shells; top with the remaining shells in one layer, Spoon in the remaining sauce over this layer. Sprinkle in as much Parmesan cheese as you want, (I like a lot of it). Then bake this for about 30 minutes.
