Angelo's Garlic, or Hawaiian Portuguese, or Hot, or Sweet Sausage & Peppers
2 – 4 of Angelo's sausages, you can choose a flavor
2 –4 red peppers
5 Tbsp Extra virgin olive oil
1 tsp Oregano
1/2 – a whole Vidalia Onion
2 Tbsp Angelo's Garlic marinara
Red pepper flakes, optional
In a large pot, boil as many sausages as you need to feed the family for 5 minutes to remove some of the fat. Remove, let cool and cut into 1/2 inch wide pieces.
Clean red peppers (remove seeds) and cut into pieces. Chop 1/2 - 1 onion. Add 5 tablespoons of extra virgin olive oil to a hot pan, add onion and let cook for 5 minutes. Add red peppers and let cook for 15 minutes turning periodically.
Add sausage and let cook for another 15 minutes turning periodically. Add water a little at a time if needed. Add 2 tablespoons of Angelo's Garlic marinara and mix in, then the oregano, and red pepper flakes if you like it very spicy but remember each of my sausages has it's own unique flavor.
Let cook for another 5 minutes. Make sure sausage is cooked and then it is ready to serve. Now, you can either put some nice Italian bread at the bottom of your serving dish, or make a loaf available, either way you're gonna want to soak up juices.
Makes 4 - 6 servings.
